Here’s a snack recipe that I made this week and am sure to devour in no time flat!
Sweet ‘n Salty Roasted Pumpkin Seeds
1 1/2 – 2 cups Pumpkin Seeds, rinsed of pumpkin meat (slime and guts) then air-dry on paper towel
1 or 2 tbsp Butter, melted
1/4 tsp. Salt
1 to 2 tsp. Cinnamon n Sugar mix
Preheat oven to 300º and line cookie sheet with parchment paper (not required, you can roast directly on pan as well.) Combine pumpkin seeds, butter, and salt in a small bowl and toss to coat seeds well. Spread coated seeds evenly on lined cookie sheet in one layer. Pop in oven and bake!
At 15 minutes and 30 minutes of roasting time, stir the seeds to evenly roast. At 40 minutes, remove from oven and sprinkle with cinnamon and sugar mix, stir. Bake for an additional 5 to 10 minutes, depending on how crunchy you like your seeds.
